It is getting to the end of the yummy peach season. Here in BC we get amazing peaches! My family and I love them. I bought lots over the weekend and had some left over puff pastry and thought I would get creative. A simple post dinner treat and kid friendly too! My toddler absolutely loves peaches.
Here is a quick and easy weeknight dessert for the family.
2 BC Tree Fruit Peaches
1 Sheet Puff Pastry
1 tsp Cinnamon
3 tbsp Brown Sugar
Slice peaches and set aside. Open up your sheet of puff pastry and place on baking sheet. In a pan melt butter and add sugar and cinammon. Add your peaches to the pan, coat in mixture and cook for a couple of minutes.
Beat your egg to make an egg wash and using a pastry brush, brush onto your puff pastry. Add your peach mixture to the sheet. Make sure you scoop out one peach at a time, you don’t want too much liquid on your pastry. Pour a little bit of the mix over. Sprinkle a little extra brown sugar and cinammon on top and bake at 350 degrees until Golden.
Serve with some whipped cream or ice cream, yum!
