Recipe: Stupid Easy Chia Pudding

So this past week I was rambling on to my husband about how we need to eat more Chia Seeds as part of our new lifestyle change. When I was pregnant I ate chia seeds daily, whether in a smoothie, in yogurt or chia pudding. It is high in Omegas which is excellent for a developing baby. It also is a great healthy option for pregnant women going through that ravenous phase towards the end of your pregnancy. As I was rambling he paused and said wait! I think I had that growing up! We frantically googled away and realized he had something very similar called basil seeds, they act the same way in liquid and also have great health benefits. One of the main differences however is that you cannot eat basil seeds raw you must soak them. Recipe: Chickpea and Eggplant Coconut Curry

This is a staple meal in our home, it is Vegan/Vegetarian friendly and my husband loves it, he requests it weekly and our toddler loves it too! I adapted this recipe from Half Baked Harvest’s Simple Almond Chicken, Chickpea and Eggplant Curry. They have so many amazing recipes on their site. It is definitely worth following their Pinterest board for inspiration. This recipe is so simple to make it is weeknight dinner friendly! It is also scrumptious enough to serve for friends.

Homemade Almond Milk Recipe

Okay, this is literally the easiest recipe ever! I love almond milk and thought of making my own and it was so easy that I now make my own if I know I am going to use it for a recipe or quickly. As there are no preservatives it spoils within a few days so I like to use for Chia Pudding or other cooking/baking.

Comfort Food! Philly Cheese Steak Sandwiches

I never really eat white bread, if I do its a fresh baguette with mussels. Yum! This past week has been wet and dreary and my hubby and I decided we wanted some sort of comfort food, I had made a roast beef the day before and thought Philly cheese steak sani’s! Sunday baking with mum! An easy way to entertain a toddler, get your hands covered with cookie dough and getting to use the hand mixer. I used to hate mess, ok I still do, but a little cookie batter never hurt anyone! So Thursday afternoon rolls around and I get a text from the hubby saying he has to go to California for work as there is an IT crisis at some of the stores out there. I must say, he is a lucky man and gets to globe trot for his work. Of course I am all Wha’! Why! Our weekend……. grrrrrrr….. Lol. But he assures me he will be back Saturday afternoon. I honestly don’t mind it too much, me and Kiyan can watch a disney movie have some of his fave food from our local sushi place, my child loves Chicken Yaki Soba. Yes, I know, no nuggets or burgers, he loves Yaki Soba. Friday was ok, we did just that, but that evening rolls around and my little man is a fidgeting drooling mess with a temperature. Oh no! I have to work Saturday and my brother has offered to babysit a healthy child. Saturday and my little guy has chills and a high fever. My brother is a champ and watched him until I could get away from work. Kiyan was so weak so I cut up his favourite fruit, honey dew melon, got him some water, juice, whatever I could get him to have. He loves toast with honey so I tried that too.

Recipe: Persian Abghoosht Recipe

This is one of the easiest Persian recipes to make. It tastes amazing and definitely toddler friendly. My little guy loves this dish. Made with simple flavours and slow cooked, you can easily make this in a slow cooker or if you have a pressure cook you can use that too. Perk is it is also a clean eat meal, just sub cauliflower for the potatoes if you want to keep it healthy.
