Comfort Food! Philly Cheese Steak Sandwiches

I never really eat white bread, if I do its a fresh baguette with mussels. Yum! This past week has been wet and dreary and my hubby and I decided we wanted some sort of comfort food, I had made a roast beef the day before and thought Philly cheese steak sani’s! All I had to do was pick up some fresh bread and provolone cheese and I could try to whip up my version.

Philly Sani

Ingredients
Fresh Bread
Provolone Cheese
Roast Beef
1 Green Pepper
Handful of chopped mushrooms
1 Onion
Hot Mustard

Method
First I slivered the onions and started pan frying, as they got brown I added the mushroom and lastly the green pepper. Once the veggies are done sauteeing re-heat your beef in the pan. I had slow roasted mine the day before so it was easy to shred and re-heat. Cut your baguette into sandwich size portions and half. On one side I put some hot mustard, then add the sauteed veggies on top. At the end of cooking the beef I added a slice of provolone on top so it was nice and melty. Once the cheese was melted I placed the beef with cheese on top on the veggies and top with the other half of the bread. Voila! Friday night comfort at its finest. And so quick and easy 🙂
