Life  Mum Talk

Oh how I have missed you!

I feel like I haven’t written in forever! It has been well over a month and I guess life got the best of me! After the holidays I started school, gasp! I am determined to finish my degree in one way or another; so back I go! In case you are wondering my degree is in Forensic Science, I don’t know if I have mentioned before but I have an obsession, on another level, with Forensic Investigation. I have probably seen every 48 hours show, or any Investigation Discovery Channel programming. Next to my obsession with beauty comes this. I was studying marketing and although I love it, I feel like we live in an era where marketing yourself through social media especially is just second nature for everyone. Since I was majoring in online communications, it just seemed silly to continue on in that realm. This is just my opinion based on the work prospects in my city and what I wanted to do. So I thought I would delve into something different. I also get bored very easily and wanted to do something totally new. So far I love it! It is very demanding, I have a paper due this Sunday which I am almost finished, yay!

My husband and I also got our new years resolutions in order. Usually it is lose weight, eat healthy blah blah blah, but this year we thought lets set goals and make a lifestyle change, make a goal to make healthy decisions, cook as a family and be outdoors often. So far I would say we have been really great! We are trying to eat more Vegan/Vegetarian foods, which has been hard to plan for but once you have a few great recipes under your belt its not too bad. We watched a few documentaries, Cowspiracy and Reboot, which opened us up to eating a more plant based diet. I have been really good, I eat completly Vegan 3 – 4 days a week right now. I am really pleased with myself. My hubby isn’t doing too bad, he is struggling with eating out. I have noticed now that dining out limits you when eating vegi. My feedback right now, feeling a lot more full on less calories which is amazing, awesome skin, I feel more energized and I am providing a healthy diet for my family which is always a great thing. I will share our families favourite Vegan curry this week. It is to die for, my husband is always requesting I make it. I will probably be sharing a lot of my new found Vegan recipes as I know it can be daunting to venture into. If you are looking for some good resources – Oh She Glows┬áis amazing! She has a great cookbook too. I also frequent Pinterest, follow Half Baked Harvest, they have some great vegetarian recipes too!

Do you have any favourite Vegi recipes?
