Recipe: Peanut Butter and Banana Oatmeal Cookies

Sunday baking with mum! An easy way to entertain a toddler, get your hands covered with cookie dough and getting to use the hand mixer. I used to hate mess, ok I still do, but a little cookie batter never hurt anyone! My little guy loves making cookies and since he was still a little under the weather I though it would be a great indoor activity for us to do. And bonus! Dad gets nice cookies to come home too.

I love peanut butter! Throw in some bananas and we have got a party! Kiyan and I just love it. So I thought I would try my hand at some oatmeal banana bread-ish cookie things.

Here is my recipe!

Ingredients
1 Egg
1 Egg yolk
1 C Brown Sugar
1 Tbsp Vanilla
1/3 C Butter
1/2 C Peanut Butter
1 Ripe Banana
1 C Rolled Oats
1 1/4 C All Purpose Flour
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 C Chopped Walnuts

Method
Preheat your oven to 350 degrees. Beat together the eggs, sugar, butter, peanut butter and vanilla. Add the banana and blend. Next add in your oats and mix, then add sifted flour, baking soda and salt and mix until well blended. Lastly add in your chopped walnuts.
Line a baking tray with parchment paper. Get your hands dirty and make small balls with a little bit of your batter, place on baking sheet and lightly press to flatten. Bake for 7 – 9 minutes.
